It looks like in order to use Eurostar Trains (from Paris to London) we would need to purchase the Global pass + pay for the reservation. Please confirm this is correct! Thanks!

That is correct. However, if that will be your only journey, then you'd better buy normal tickets, e.g. on the Eurostar website. A pass only pays off if you're planning multiple journeys on multiple days.
