You can travel to all those cities with participating railway companies.
In France, Ouigo and Frecciarossa can't be used; in Italy Italo can't be used. In both cases though, there are enough trains that can be used.
Also please note that you can travel on the Glacier Express and Bernina Express routes every hour in regional, reservation-free trains. In the Bernina Express, you can even use the carriages at the front of the train without reservation. The regional trains and reservation-free carriages are generally much less crowded than the expensive panoramic carriages. And they often have windows that can open.
I'm not sure what you mean by "in other cities the Eurail pass not recognized with the Travel Partners”. The pass is generally only valid in trains and as such, its use within cities is limited. It can often be used on suburban trains (biggest exception is Paris: not valid in RER trains) but not in bus, tram or metro, since these are (almost) never operated by a participating railway company.

3N Paris - I m considering to purchase Paris Visite Travel pass. It will give me flexibility to travel point to point beside walking which is definitely best way to explore the beautiful Romentic city.

For Paris, consider using a One-day Navigo travel card instead. It's only €12 per day (single tickets are €2.50). The Paris Visite Travel pass is overpriced and as far as I can see, the only extra is that you can access the airports with it, but even if you need one trip from the airport (€13), it's still overpriced.
