With my global pass from my country of residence the outbound journey involves using two trains would each train be classed as a Journey meaning this would be 2 journeys
You can use as many trains as you like. You can effectively use 2 of your travel days in your country of residence.
IF your trip To LON and the (as its the only thing on rails that leaves the UK) €* are on SAME day it counts as 1 travelday-and you can even use that same day for as many onward connections as is possible. IF you stay overnight in LON and go onward tomorrow=then its obviously 2 traveldays. And in that case have to find another way in coming back at the end. But noone obliges you to also come back on those things on rails- a RYAN (or much better another cheapee in the air) is also OK
