I am planning an interrail from Milan, PARIS, AMSTERDAM ARRIVING in Rome in 4 days, how are the travel days counted? based on the trains I take, or based on the days?

All trains that you board between 00.00 and 23.59 CET are the same travel day, no matter when you leave the train.

On the days. If a night train starts before 12pm it still counts as one day as far as I know.
