I would like to know, if I buy a Flexi passes, I have to define the days which I will travel since the beginning (in advances), or how just going the the train stations the days which I want to travel?

You can activate a travel day at any point, better do it right before boarding the train. I always do that so I know there are no strikes, cancellations, I'm not sick, etc.
(Seat reservations might need to be purchased in advance but that depends on the route and country.)
