You can select during the purchase on https://www.interrail.eu/en/interrail-passes/global-pass that you'd like a paper pass.
The Rail Planner app won't be useful then. It's mostly used to log trains with a mobile pass.
For actual planning I recommend using DB Navigator app and the companies websites/apps.
