How far in advance to plan non-reservation trains for Eurail?

I have never used the Eurail before.  I already have my reservations for the required trains in advance.  But for normal trains, I’m not sure what train I want in advance, can I just show up at the train terminal and add the train to my pass that morning, or do they get overbooked and I’ll find myself unable to board unless I schedule them days out?  This is regarding non-reservation trains.

Yes, this is one of the major benefits of a pass.

I tend to do my research, and add several trains to My Trip. Then decide which one I want when I get to the station. If there’s no reservation required, you can just board and find an empty seat (or stand!). It can’t ‘sell out’.

You can actually edit My Trip even if the trains are in the past.
