I am planning a trip in September/October starting from southern England and at the moment finishing in Vienna. If I flew to Scotland at the end of this trip could I use my inbound day of travel for a train from Scotland back to southern England? If that’s acceptable does the inbound travel day start as soon as I step off the flight or can it be started within the validity period for the global pass?

Yes you can do that, on whichever day within the validity of your pass you please.
Note: the in/out days will use 2 of your allocated days, they are not in addition to them.
