Hello, I am resident in Hong Kong although I have Spanish nationality and passport, I am not sure if I should use the 'interrail platform (European citizens) or Eurorail (non-citizens and non-residents).

If you are a resident of Hong-Kong and have a proof of that, then you should use a Eurail pass.

However, no one would question if you use an Interrail pass with your Spanish passport, but in that case you can only travel on two days in Spain according to the Outbound/Inbound rule.  A Eurail pass, which is the one you should buy is better if you want to travel in Spain.
