Hello, I would like to buy an Interrail Pass today or this week-end starting from Monday, July, 18th 2022.
In the Interrail website, it's not possible to buy any Pass at this date.
How to proceed?

Unless you are trying to buy a 1 country pass for the country you live in then yes it is possible to buy a pass starting any day you please.
Interrail is only available for countries you are not resident in (or in the case of a global pass a maximum of 2 journeys within your country to enable you to get to a neighboring country or port/airport).
If you explain at what point the purchase is failing then it may be easier to get help.
The problem may be that you chose a paper pass and the delivery can't be earlier than your start date. In that case, just go to an SNCF ticket office and buy your pass there.
