I am trying to book a Eurostar ticket but it says my inter rail ticket is not valid on that day even though I have a ticket for the journey on the app .

If you have the journey in the app or not doesn´t matter as both systems are seperate Means they have no connection to each other.
Where are you trying to book? Eurail/Interrail? B-Europe?
What error message you get?
Which date?
Which pass do you have? Only Globalpasses are valid on the Eurostar services :)
What is country of residence on the pass? Maybe you already have used both Country of residence journey´s known as Outbound/Inbound journey
