I heard that when you book an outbound journey, you also need to book an inbound journey. But we are traveling one-way. Only need an outbound.  Is this possible?

Absolutely no problem.

The pass allows up to 2 travel days per pass (irrespective of length of pass) where you have the ability to travel in your home country. There is no limit on how many trains, whether you leave your home country or even if you use them. You could even use both these days to travel in the same direction if you want. (Fly out/Train back)

You can use 0,1 or 2 in your home country but obviously not 3 or more.
