In this picture you can see my first and last ride. I have hidden the rides in between to make it less complicated. My question is: Can I start this journey with this 15-day pass or are the days not enough?

No you can't. The validity ends at midnight CET on the 15th day, which means you cannot continue after midnight, not even with a night train.

That would work. First travel day is 5 August, so 18 August is day 14. You can still travel with other trains on 19 August if you want (after Zürich HB), but you'll have to split the night train at e.g. Villach, so the inbound journey will be on 19 August.
