I am looking to book a train from Tirano to Firenze (Florence) on an Interrail Pass but the results all send you back north and take 22 hours rather than via Milan - what am I doing wrong?

Way too early. Italian railways are amongst the last one to publish their timetables.
It’s enough to check one or two months before travelling. Reservations are not needed for the first leg until Milano and usually possible even last minute on the second leg from Milano to Firenze. Multiple trains per hour.
