We are hoping to limit the number of phones we have with us and I’m wondering if we can load two passes on one device. Also, how do we upload child passes?

Yes, you can add multiple passes to one phone. See this guide https://www.eurail.com/en/eurail-passes/eurail-mobile-pass/getting-started
Not sure what you are asking about child passes, they function exactly the same as adult ones. Free child passes, if they apply to your group, must be added along with adult passes, they can not be purchased separately.
