It’s my last of my 7-day train within my 30 Day Interrail Pass, but not the last of the 30-day range.
I’m leaving Oslo at 15:45 and will arrive in Hamburg at 05:58 in the morning.
To get to Frankfurt, I’ll need to book a separate ticket, since it’s not included in my pass. Is that right?

There is no 30-day pass, but there are passes with a validity period of 1 month. That can be between 28 and 31 days, depending on when your pass starts.
If you use your last travel day to get to Hamburg, then you'll indeed need another ticket to travel further.
