I’m based in Bergen (Norway) and planning a trip towards central Europe with a global pass. My current plan is:

day1: take the train from Bergen to Oslo on my pass and then take a night bus (not on pass) to Hamburg.

travel in Europe with my pass

day 5: arrive in Oslo after taking another night bus and take the train from Oslo to Bergen.

Would these train trips count as inbound/outbound trips? I'm a bit unsure, as I won't be crossing a border by train

Any travel within your home country counts as using one of your in/out days, so yes those trips count.

What you propose is a perfectly acceptable use of the pass, you do not need to cross a border on the pass from your home country.
