I’m told there is an exception for Caledonian Sleeper.
There’s no specific exception for the sleeper. There used to be a ‘night train’ rule - many years ago - where trains departing after 1900 would count for tomorrow’s day of travel. But that has long since changed.
Eurail have been known to grant an extra outbound day to people who can’t leave the UK from their home station in a single day. But that’s more likely to apply to people in the north of Scotland.
From the borders, you can be in Paris by mid-afternoon.

The night train will be your friend on the return journey - where you can cross half of Europe, and get to London in time for the sleeper. All one one travel day.
