I bought a 3-month unlimited mobile Interrail Pass on 8 May 2022. Can I activate it on April 8 2023 (ie within the 11 months of purchase) and then travel for 3 months thereafter (until June 8 2023, ie travelling beyond the 11 months after I purchased the pass)?
Bascialy, as long as I activate within the 11 months, I can travel beyond the 11-month time-frame - is that correct?

Yes, that is correct. The first day of the validity of the pass must be within 11 months after you purchased the pass and then you can travel during the validity of the pass.
No , then last day of start to travel should be 7/4/23=1 day earlier, and use till 6/7/23.
This is whithin 11month-same as for using montly etc passes rules.
It will assume day of activation is also travel day-you do not need to travel that day if that does not suit you.
