I have a 1st class 2 month Interail pass with my wife, On non reservation/ sleeper journeys in Europe are we required to download a ticket to the App on all journeys or do we just show our passes which is on our phones? Thank you

On all trains, you need to show your ticket (QR code) in the app. On trains with mandatory reservations you also need to show your reservation.
There are no non-reservation sleepers. All night trains have mandatory reservations except the seats on DB IC trains that run overnight.
