We are currently booking our trains from 15 december.  The eurail planner doesnt currently list the trains so we have booked  our reservation directly with OBB and Leo Express but obviously

not paid for tickets

On the Eurail apP, do we have the assign the travel days?  Do we enter manually or have to wait until they show?   What happens when someone asks us to see the tickets?

We just wanted to lock in the seats and trains as far in advance as we could

Reservations and the pass (in the app) are separate.

Reservations are best made directly with the operators (like ÖBB) or, when that's not possible, on agent booking websites, such as Rail Europe, see this page:

In addition, you always have to register any train you use, before you board it. When you add the first train of the day to your pass, the app will offer to activate a travel day. There is no need to activate your pass or any travel day in advance.

Thabk you!  So when it says to show your pass, is it a qr code or just simply show the pass.

we just have to wait until the travel days appear on the eurail app and then add it?

A valid travel day indeed has a QR code, which is the ticket for the day. It will appear after you've activated a travel day. Also see this page:
