Hello Aurora! Yes you can :) Since you are going to fly to Greece, there is no problem buying two separate passes.
+8Interrail is not very good in Spain. You have reservation fees for most trains, and it’s not always easy to get the reservations.
Check prices for your trips on trainline.com to see what it what cost to buy tickets instead. It may well be cheaper and certainly easier!
