I will be traveling from Waterloo Station to Dorchester South. The app is not giving me the option of choosing South Western Railway trains. Is the train included in the eurorail pass? I'm not seeing it listed on the website either.

South Western is included. If you don't see the train you're looking for, then first check for app updates.
There's however no need to add it in advance. Just wait until your travel date, check for updates and if it's still not there, then you can add it manually.
