Is it possible for me to buy a pass which acts as a return day pass each day? I plan to stay in St. Gallen, Switzerland and each day travel from there to a different place for the day and then return back to St.Gallen to stay the night and so on

Yes, just a normal pass will do this. Except in your own country, you can travel in any direction you like, on whichever trains you like.

You might find that the Swiss Saver Day Pass is cheaper, if you book early enough. You have to do the maths.
