I will be leaving the UK with my interrail pass and I have the Eurostar journey booked. Do I also need to book the journey that takes me to London or can I just board and show the app pass?

Day trains in the GB don't have mandatory reservations, so you can travel on your pass alone. Some trains can get busy, and you can book a reservation if you want via LNER (only their own trains) or GWR (all trains in GB), or at a ticket office. Seat reservations in GB are free of charge.
