My Interrail route is going to be Vienna-Venice-Milano-Nice-Montpellier-Barcelona-Valencia-Madrid.
is this route going to be 6 or 7 travel days?

I count 7 pass days here. On a pass day (00:00 - 23:59) you can take how many trains you want.

Assuming you are staying overnight at each place then, as Thicabe states, you need 7 travel days. However you could do Venice to Nice (via Milan) in a day. However since there is no 6 travel day pass it isn’t necessary.
