Travelling from Leeds UK via train

Hello, I’m planning to go interrailing later on in the year and am planning on using two of my journeys for inbound and outbound travel from the UK (my home country) and just want to check if it is alright!

I live in Leeds, so am planning on taking a train from Leeds to Kings Cross and then changing to get the Eurostar from St Pancras to Brussels. Then I’m planning on returning by flying into Luton Airport and taking the train back up to Leeds. My plan is to get a train from Luton Airport to St Pancras and then travel with LNER back up to Leeds. Is all of this ok and does it count as one outbound and one inbound journey? Are all of the trains I have listed included with an interrail pass?
