I am completely new to Interrail and intend to purchase a Global / Mobile pass.
I want to travel from my home in UK to Paris or Barcelona on the same day.
Home to London St Pancras, and then London St Pancras to Paris or Barcelona, have to be booked separately.
Will that arrangement still count both as only one travel day and my one allowed outward journey? I think that is the case but would value confirmation, or otherwise.
I’d be doing the same in reverse on my return journey.

Yes sure that's fine. It will use a pass day with one of the 2 inbound/outbound days.
Please book your seat reservations well in advance. This is a very popular route and on top of that Eurostar has a passholder quota. Eurostar costs 30€ and the TGV to Barcelona 35€ (there are ways to save money). Trains can sell out weeks in advance, especially morning Eurostars.
