When will the timetable from December 16th be updated?
Maybe this week, maybe next week, maybe after that.
But it doesn't really matter. The Eurail website and especially the rail planer app is the last place to check timetables. Use national timetables; for international journeys, bahn.de is a good choice. For reservations, check:

I still think that the update is kinda late this year. The vast majority of people using Interrail/Eurail do not check the community and might just wait rather than checking elsewhere.
Yesterday I've got 2 different couples learning that their Eurostar trains over Christmas are long sold out, while they were patiently waiting on timetables to be published on Rail Planner... they are definitely not alone.
Now they had to book expensive Eurostar tickets or for the other couple flight tickets.
(I wouldn't be surprised if we get few posts of angry/confused Eurostar travellers once the timetable is finally uploaded!)
This is not good for the Eurail customer experience honestly. It wasn't that late in the previous years, we're now a month away from the timetable change... :/

You do have a point here and this will very probably happen. It also occurred previously because of the artificially short booking horizons for some of the night trains.

Apologies for my ignorance, But how do I update the app? I have been checking my app daily and it continues to show today (22.11.24) no trains in the planner beyond Saturday 14.12.24.

It's normally automatic in the background, unless you've turned off automatic updates. How to update depends on your phone operating system and maybe also the OS version. One method on Android is to look for the app in the appstore (Google Play) and then it will say whether there's an update, with a button to install the update.
It's not urgent though, since you only need to add a train before you board it.

The current app version for Android is 43.3.0, released on 15/11.
I have 43.3.0, the app store still says 1 November is the latest release, and 16 December etc details are not available yet. Not sure what to tell you.
I had a beta version of the Rail planner app installed, but I've gone back to the main 43.3.0 release and indeed, it is very much out of date (app dated 1/11 and timetables dated 31/10, which is is really very old) and nothing from 15/12.

I have question, I already purchase seat reservation for our family from other site like RailEurope for Christmas time, but still don’t have tickets since the Eurail timetable not update yet. Is it possible for us to running out tickets when the timetable updated even though we have seat reservation?
I’m a bit concern with this uncertainty since this is our first time using Eurail and I’m taking my family with 2 little kids this time.

Your Eurail pass is the ticket, so no trouble there. No need to stress about it. Trains are running, you can always check on the websites of the train company or a website like www.bahn.com or www.sbb.ch/en that have the updated timetables for almost all of Europe. In need, you can always add a train manually to generate your ticket/qr code for the travel day.
Are you sure you updated the app? You can force it to update in the respective App stores.
I have version 44.1.0 (last update 22/11) and I see most, if not all timetables after the timetable switch on 15/12.
- Can you check on your device which version of the rail planner app you have?
- For which routes are you checking on the app? Can you give your outline, so that we can double check? Maybe there’s a specific issue on some routes, or some specific timetables were not included yet in the update.

Yes, I just update this morning it’s already version 44.1.0 now. But as per your answer just checked some of them already showing and here are the last two journey that still not showing.

I don’t know whats wrong but I have try to reset all the filter but still no available. Until just now after try to close the apps and restart my phone now its show the journeys. Now I have made to get all my journeys.

You'll have to find a free seat yourself.

It wasn’t that I wanted it to plan since I use bahn.de for that, it was more that I wanted to be sure I had access to the QR code for the ticket inspector, and I prefer to do that before I start my trip so I don’t have to worry about it. That said, part of my journey is on the TGV and since I know both that seat reservations are required and that Eurail pass seats are limited, I wanted to make sure I got a spot on the train I hoped to take. In the end I booked my seat through Rail Europe to ensure I had what I needed.

Limited pass holder seats are only on Eurostar and TGV from/to Brussels. On domestic French TGVs, only the €10 reservations really have limited availability. After that, it's €20 until the train is full.
Some TGVs have some “Business Premier” seats (1st class with extras), which can't be booked with a pass, so maybe that's what the "limited” in the rail planner app refers to, but that really only applies to a limited number of TGVs.
