Can I use regular estonian, Latvian and lithuanian trains with an interrail global Pass? Are there trains to use in These countries? Because some of them do not appear on the interrail map.

Yes there are trains in those countries and you can use them with your pass. Don't look for timetables in the app (check the operators’ websites) and what the Interrail map says is irrelevant.
Also check regular fares because they're often cheap, you if you have a flexipass, using a travel day is not always worth it.
