The only map Eurail produce is this https://www.eurail.com/content/dam/pdfs/Eurail_map_2022%20RGB.pdf
which is not very detailed at the country level especially for places such as Italy with a dense network in many regions.
You will have to look elsewhere for good maps, comprehensive free maps can be hard to find for many countries.
All trains operated by Trenitalia are included, regional networks like Trenord too. The pass is however not valid on .italo high-speed trains and a few exceptions : https://www.seat61.com/interrail-and-eurail-reservations.htm#Italy

It won’t show you which routes are included in Interrail but you could use it in connection with the rail app.
