We would like to travel next spring (2024) to Prague, Krakow, Vienna, Budapest, Belgrade, Sofia and Istanbul.

Can we reach all of these on a Eurail pass?

The only city that might get a bit complicated to get by rail is Belgrade (Serbia) due to works on the line and almost no international trains. You can go instead to Bucharest (Romania) which has direct trains to Sofia and from Budapest.
