The only train available that i can see is the ICNuit on 12 May from Latour to Paris, book via raileurope. After that book a reservation from Paris to München direct or via Mannheim, €18 via raileurope. Book both of these as soon as possible! There is a high chance they will sell out.

Everything else is sold out at the moment, so the alternative is spending two full days travelling to get to München… (I dislike this sncf practice)
The option I can see is a Rodaliers regional train from Barcelona to Latour de Carol-Enveitg (La Tor de Querol in spanish systems). These don’t show up on normal journey planner sites but interrail/eurail is valid on this. You don’t need a reservation to use Railjet, but you should be able to make one via ÖBB. You need reservations if you use Regiojet. https://www.seat61.com/interrail-and-eurail-reservations.htm#Hungary They said they are travelling in the summer, and in DB's infinite wisdom this does mean that reservations are required for the railjet….

Be sure to double check before paying that you are in the same compartment! You can recognise this if the first “seat” number is the same, and the carriage number.
It should, somehow, be possible to book 2x 4-person couchette compartments using Espace Privatif. It isn’t on raileurope, but adding another person and entering one of your own pass numbers also works
These are bookable via Raileurope, the interrail/eurail reservation service or NMBS, Raileurope doesn’t have any booking fee, NMBS has a €4 booking fee per order, interrail/eurail has a €2 per person per train fee. The first two only require a pass number when paying for them, not for looking for availability. So this way you can check availability, and if you log into raileurope you can reserve these beds for a week I think? By keeping it in your basket.
Have you checked some full price tickets? Night trains for example can be cheaper as a full price ticket than as a reservation with interrail. I’m back from Venice today, check price for night prices, interrail - best Ah yeah I mostly meant domestic Italian night trains. Alternatively, have you considered looking at central/Eastern Europe? Things can be cheaper there.
Booking in advance for the international connection makes sense. There is a quota on the TGV’s from Barcelona to Montpellier, There is no pass holder quota anymore on those trains. There may be a quota in general to limit the number of tickets/reservations from southern France to Spain, in favour of people who travel from/to Paris. Ah, that’s new then, it used to be that case at least. Or it could be that in a classic SNCF moment it was just fully sold out all the time😅
I’ve taken quite a few night trains this year and last year, your couchette/sleeper attendant will just make a picture of your phone ticket. I presume this is an ÖBB Nightjet? In that case it is definitely the case of not requiring a printed ticket.
You cannot. In this case I would just do as Thibcabe said and take it on your phone.
Spain and France are unfortunately one of the worst countries to use interrail/eurail in. The seat reservations sometimes are cheaper than full price tickets, so it might be worth it anyway. Booking in advance for the international connection makes sense. There is a quota on the TGV’s from Barcelona to Montpellier, and these reservations are expensive. It is a lot cheaper if you use the Renfe AVE International. These can be booked at Spanish ticket offices, on weekdays good in advance, on weekends three days in advance. See interrailwiki.eu/spain for Spain, interrailwiki.eu/france for France. Booking of the TGV’s is cheapest via Raileurope.

There are a lot of engineering works around Germany at the moment. In this case you can just book it, no problem. If you do get a large timetable change then you can just cancel your ticket if it doesn’t work out.
Even if this does need to be printed, yes this can just happen at either a ticket office, or a ticket machine at any station in Austria. Look for the ÖBB ticket machines!
