So I am able to go from Stazione Termini Roma to the Francfort sur le Main to Gare de l'Est? we are not very familiar with high speed train stations so I just want to make sure we go to the correct train station. and do we need reservations for these train specifically

Yes, with changes in Milan Central and Zürich to get to Frankfurt/Main Hbf.
Frankfurt-Paris Est can be done directly.
Yes reservations are needed, with the exception of Zurich-Frankfurt. Best get them on www.raileurope.com (add interrail as a discount, under the search window).
Mention travel date and time to get specific advice.
No single bigger station is similar, they all have their unique architecture. The internal station map can usually be found on google maps or open street map, if you want to familiarise yourself with the surroundings.
