For example: I have a global pass with 7 travel days. My home country is Switzerland. Does the first journey from Switzerland to France count as 1 travel day? Then 6 travel days would be left and I need the last one to return home? Thanks for helping

All days when you travel count as travel days.

You don’t need do use the outbound/inbound journeys so if you are making a short trip from/to your home country and you want to save travel days you can always buy an ordinary ticket for a trip.
