Hi everyone, I’m trying to reserve seats on a train from Venice to Paris on 19 July but there only some very long and slow options currently available. Will the faster trains become available later? It’s just I’m worried about booking the right Eurostar connection.

Yes, Italian trains will be available from March/April. There's a timetable change in mid-June.
You can get a rough idea using April timetables when the direct Milan-Paris will run again. :)
In July there are engineering works on Milan-Geneva/Bern (Simplon) so I wouldn't go that way, even with replacement buses running. It'd add an hour on an already long journey!
Are you planning to get from Venice to London in one day? It's possible, but it's a long day.
Like @thibcabe says, check timetables in April as a guide. By then the direct trains Milan-Paris will be running.
I think you would be safe booking the 2101 Eurostar, arriving 2230 in London. That should be a comfortable connection from the Milan-Paris TGV.
