We travel to europe in december and plan to take our first train on December 15.  We want to reserve our seats as early as possible to ensure we can get the seats we want

we note we still cant see trains after this date yet on eurail but note some dates starting to appear directly on the train providers websites but with warnings of changes.

is it worth waitinf until they appear on thr eurail sites?

No need to wait for eurail to put their reservations online. As soon as the railway companies sell tickets, reservations can also be booked.

Eurail is in most cases not the best place to book reservations. Instead use this page as a guide: https://www.seat61.com/interrail-and-eurail-reservations.htm

I agree with "eurocity101." I check the website of the railway company I'm planning to ride, such as OBB or Renfe. OBB publishes track maintenance information, which is very convenient when you make a reservation.
