The Interrail website shows reservation fee indications. Before I purchase a pass, I want to check the precise cost of reservations on specific Eurostar trains (I assume they are more expensive on busier trains). But to do that I need to book a journey, and to book a journey I need to add a traveller, for which I need a Pass number. Is it possible to check the price of specific seat reservations before buying a pass?

Eurostar prices are fixed. They depend on the route and class, but not the dat/ time.
Busier trains simply won't have reservations available - even if tickets are still on sale.
You can check availability on Rail Europe, without a pass number
