Inbound/Outbound travel

My country of residence is Germany and I am planning the trip around IT and some other parts, but will start on Amsterdam. From Amsterdam On the first day I would use my outbound travel from my country or wish to do so. 

But then from Amsterdam I am heading to IT, the easiest and fastest way is to pass through Germany once again. If I do that, would I use my inbound ticket already? 

In general am I permitted to do this or how does it work? Could someone provide their experience?

You can travel on a maximum of 2 travel days, the so called inbound/outbound traveldays, in Germany if Germany is your Country of residence (CoR) and it doesn't matter when you use your I/O days. So you can use your second I/O day to go to Italy. You then need a normal ticket from the German border to your home on the way back.
