I’m trying to book the night train from Hamburg to Stockholm for the end of July but there doesn’t seem to be any available on sj.se - Does anyone know whether I am too late or too early??
On Snälltåget you can only get as far as Malmo and the train leaves very late - at midnight, which would be hard with 3 kids!

Not available yet. I don't know when SJ plans to release tickets, there are trackworks along the way which are likely to alter the usual schedule.
Keep checking regularly :)
Snälltåget also runs as far as Stockholm but the departure time is indeed pretty late. Still ideal when you're coming from far away (for example if you start your day in France).
Btw if you want a longer night's sleep you could board either night train already in Berlin.
