I am not seeing any night trains in the Eurail app. There are no Intercity Notte in Italy at all (e.g. Milan to Bari), and nothing from Paris to Nice. I also tried SCNF and trenitalia's sites but nothing came up. Are they all cancelled or am I missing something?

How far out are the schedules open?
For SNCF they are currently open 4 months in advance, unless there are engineering works, which is often the case for night trains. Briançon-Paris is still listed:

But I don't exactly know how often it runs.
Trenitalia don't have a fixed booking horizon. It can be a few months or as little as a few weeks. They normally run every night.
The night trains you mentioned are running are are in the Rail Planner app. I just checked for today.
However, you forgot to mention your travel date(s). SNCF and Trenitalia don't open reservations before the timetable is final and normally publish the timetable only shortly before that.
+3Thanks for your response. I was looking at late September - so in about 6 weeks. I think I saw there was a train from Briancon to Paris but it was discontinued or had track work interuption. How far out are the schedules open?
