Yes, it is mandatory to reserve seats in the Frecciarossa (the company is Trenitalia). You can board, but you will have problems with the ticket inspectors and probably pay a fine in the train.
It’s mandatory on Frecciarossa, costing €13 per train.
You can book the seats on Raileurope.com - just add your pass in the search box.
You can avoid the reservation fees on Verona-Milan by taking regional trains, a bit slower. It’s not really worth doing this for the other journeys.
