I’m looking to book couchettes for my family on a Friday night train in late August from Salzburg to Paris. I know it is too early but I can’t find any couchettes available for Friday nights that appear to be “open”. Is there something special I need to do? Should I plan an alternative route or way of transportation?

My guess would be that there are currently French classes on ski camps in Austria and they're coming back home using the night train every Friday. Only a guess though.
Shouldn't be an issue to book couchettes as long as you check regularly when tickets are released. Use nightjet.com and add Eurail as a discount.
Are you 4 or 6 ? Otherwise you'll likely have to share with others unless you add a ghost person.
