I read online that you have to scan your train ticket when traveling anywhere in the Netherlands, both entering and leaving the train/station. How do I do this with a Eurail pass where I won’t even have a train ticket? I will be at the Amsterdam airport and then other cities within the Netherlands.

The train station in Amsterdam's Airport doesn't have access gates. As long as you have an active travel day (and you have added those trains to your pass) you can board any train. Once you arrive in Amsterdam you'll need to scan the Eurail pass at the access gates to leave the station.
Note it might not be worth it to use a travel day for the short journey to Amsterdam.
