I read online that you have to scan your train ticket when traveling anywhere in the Netherlands, both entering and leaving the train/station. How do I do this with a Eurail pass where I won’t even have a train ticket? I will be at the Amsterdam airport and then other cities within the Netherlands.

The train station in Amsterdam's Airport doesn't have access gates. As long as you have an active travel day (and you have added those trains to your pass) you can board any train. Once you arrive in Amsterdam you'll need to scan the Eurail pass at the access gates to leave the station.

Note it might not be worth it to use a travel day for the short journey to Amsterdam.

I mean that I would be going from Amsterdam airport to another city in the Netherlands, and then transferring to another city in Germany. What do I use for my ticket to scan at the train stations in the Netherlands?

If you need to pass gates, scan the QR code on your Rail Planner app.

If you stay within the station, there’s nothing to do.

where do I find the QR code in the app? Will this appear after I have activated the pass?

A QR code is generated per travel day, when you add the first train of the day to your pass. You can only do that after activating the pass.

This is explained here:
