My friend and I are going from Barcelona to Copenhagen. But we can’t make the seat reservations, that we need, through the app or website and at the station we could only buy the seat reservation from Barcelona to Paris (which is the first stop) but not the next stop in Manheim and Hamburg
So how do we make sure that there is available seats for our upcoming trips when we can’t book it in advance.

Paris - Mannheim there is usually still seats free.
Mannheim - Hamburg you dont need to reserve the daytrains (but you can directly via bahn.de)
The Nighttrain can be reserved via oebb.at 
if you wanna use the Nighttrain i suggest to catch from Paris a TGV to Muhlhouse and catch from Basel or Freiburg the Nighttrain to Hamburg (to have more time to sleep)
Hamburg - Copenhagen you can reserve via DSB Udland page of B-Europe

Online if the Interrail reservation website is working. Otherwise at the SNCF/Deutsche Bahn/Belgian Railways ticket offices. Or by phone via Belgian railways (they'll normally mail the reservation) or Deutsche bahn (+49 30 2970).
