Seat reservations for France/Spain

Hello everyone, I‘m traveling to France and Spain soon and I‘m wondering when the seat reservations should be purchased. 
 

I‘d like to have some flexibility with my stays and book the reservations 1 or 2 days prior departure. However I figured this might not work out, since some trains may already be fully booked by then.

Stops will include Paris, Nice, Barcelona, Madrid and Sevilla. It would really be helpful if somebody could share their experience and guidance on when they reservations should be booked. 


Also, I will be traveling in September so the Paris Olympics shouldn’t be an issue.

In July-August: no chance. In September? Should be fine.

There are usually alternatives: like if Paris - Nice is sold out, take one of the many TGVs to Marseille and continue by TER.

Nice - Barcelona is a too long journey to risk it imo. Trains are also so infrequent across the Spanish border.
