You didn't mention departure time (and yes, that's relevant to give advice) but you're probably too early. The new annual timetable comes into effect on 11 December. Not all timetables have been released yet and not all trains can be booked yet.

2.the OvernNIGHT trans that also run on these lines cannot be done via bahn.com (on whose network I now use the free wifi). Must do via oebb.at-and read the main overview by seewulf of howtodo RES on your own
3.M->Bp on the day does not need to RES-its optional. Advisable as such on busy days
Having left PL this day I had to do 3 RES there-and all were done within 1 hr before dep and it all went smoothly.

Eurostar can be 6 months ahead. dB timetable was published on12th Oct, which I thought meant it could be reserved.

We can give a general advice, because due to the timetable change the booking opening is smaller.
If you take from Paris the nighttrain to Vienna, booking is open also for pass holder via oebb.at.
Same if you take day trains in Germany and Austria. Reservation optional - bookable via DB or ÖBB. International trains to Budapest have also only optional reservation, the app/website of interrail.eu is wrong. But if you enter the train in Munich I reccomend it due to the long trip. If you enter in Vienna should be possible without.
For day trains France-Germany only possible online via Interrail.eu but they do not have the data yet. I would check sncf-connect.com if they started to sell it. If yes you should be able to buy it at alternative ways like SNCF Call Center, SNCB Call Center or travel agencies in UK that can sell SNCF or DB tickets.
Definitely reserve Munich to Budapest ! The railjets on this route are very busy! If you’re in the UK ring DB and collect the reservations from a ticket machine in Germany. This works really easily and they even email an idiot proof guide in English. For Paris to Munich ring SNCF after it appears on the SNCF.
There are specialist agencies in UK that can handle this type of booking. Try Discover by Rail. Obviously you’ll pay commission for the time they’ll spend but they can book anything including the Sofia Istanbul sleeper.

No need to ring, you can book the day trains online via DB or ÖBB; night train only via ÖBB.
