Is there any platform where I can select my seat for French trains and Spanish ones? As I saw that on the interrail service you are getting random seat allocations.

In Spain: www.happyrail.com has a seat map for RENFE trains.
In France, 2nd class doesn’t have a seat map but you can request some preferences when booking through raileurope.com.
