We will be traveling from Vienna to Poland overnight tomorrow and need to make reservations. Our train gets to Vienna at nearly midnight tonight so I know that the ticket office will be closed. I tried to make reservations in Italy but they said they couldn’t do it. I realize the cars sell out but I have no way to do it early. Is there a way to make these reservations at a kiosk once we arrive? We have mobile global Eurail passes

Check if you can do online via oebb.at =austrian railways.
Maybe there will be a helpful austrian coming along who knows if machines (kiosks will not be there) can do it there, but I doubt this.
If I read properly, you stay the night in Wien? Find placetostay close by HBF (plenty) and come along next morning. Then they should also be able to advise you about any ALTern. (we could perhaps even also, in case you had been more precies about to where etc).
Ticket center at the main station in Vienna is open 5.45 to 22.30 (23.30 for first class customers).
It’s possible to collect at a machine (just) if booked by phone before.
