You don’t book anything in the Rail Planner app, you only indicate what journey you make to obtain a ticket (QR code). If you take another train as planned, you have to delete the old one and add the new one. Therefore it is easier to add every train separately.

If you reserve a seat, the reservation will no more be valid in the next train. If reservations are mandatory, you must exchange them at a ticket office free of charge, Otherwise you can exchange them or obtain a refund, or you can travel without reservation on the next available train.

Don't deletes the Journey you missed, just deactivate it. If you delete missed Journeys in the Railplanner app you have no proof if you would need to claim delay compensation from Interrail.

I prefer take screenshots of the tickets (under the QR code), before the start of the journey with the planned trains and at the end of the journey with the effective trains. Before the end of the day, you can change everything and it is not a proof to show inactive journeys. If you claim for a delay compensation, they must trust you or they can probably check all changes you made in the app, which were transmitted to the server, and see when you really had an active journey during a specific time period,
